I had some chicken and a pile of onions, so I thought, why not whip up something new? This dish started as a way to clean out the fridge before a grocery trip. Once I added the mozzarella and asiago, it turned into a family favorite, perfect for busy weeknights when comfort food is a must.
The secret lies in caramelizing the onions until they’re deep and sweet. It adds a rich flavor that melds beautifully with the orzo and chicken. Stir frequently to keep everything from sticking and ensure a nice, cohesive texture.
Ingredients in One Pot French Onion Orzo with Chicken
This dish relies on a few simple ingredients that come together to create something special. Each one plays a vital role in building flavor and texture.
- Boneless, Skinless Chicken Breasts: These are the protein star, providing satisfying bite-sized pieces that absorb the flavors around them.
- Onions: Thinly sliced and caramelized, they bring that essential sweet depth to the dish, making each spoonful comforting.
- Chicken Stock: This adds moisture and richness, tying all the ingredients together and enhancing the overall taste.
- Worcestershire Sauce: This brings a savory, umami richness that deepens the flavor, balancing the sweetness of the onions.
- Uncooked Orzo: This tiny grain not only fills out the dish but also soaks up the flavors beautifully, creating a creamy consistency.
- Shredded Cheese: The blend of mozzarella and asiago melts into the dish, giving it that creamy, gooey finish that makes it hard to resist.
- Butter: This contributes a rich, savory flavor and helps with browning the chicken and onions, adding depth to the dish.
- Bay Leaves: These add a subtle herbal note that infuses into the dish as it cooks, enhancing the overall aroma and flavor.
- Salt: Essential for seasoning, it helps to enhance the natural flavors of all the ingredients.
- Black Pepper: Adds a slight kick that balances the sweetness of the dish, rounding out the flavor profile.
- Dried Thyme: This herb adds an earthy note that complements the other flavors, bringing everything together.
- Key Technique: Caramelizing Onions: Cooking the onions until they’re dark and sweet enhances their flavor, adding depth and complexity to the dish.

How to Make One Pot French Onion Orzo with Chicken
It takes about 60 minutes to whip up this comforting dish, and the process is straightforward. The caramelized onions really shine, bringing everything together for a cozy meal.
Prep Chicken: Cube boneless, skinless chicken breasts into 1/2 inch pieces. This helps the chicken cook evenly and absorb all that flavor.
Sear Chicken: Heat olive oil in a pan over medium-high heat for 2-3 minutes, until it’s shimmering. Cook the cubed chicken for 5-7 minutes until golden brown. You’ll want that nice crust—if there’s excess liquid, soak it up with paper towels.
Cook Onions: Remove the chicken and lower the heat to medium. Add butter, then toss in thinly sliced onions. Cook uncovered for about 5 minutes until the onions are starting to soften.
Deglaze Pan: Pour in chicken stock and Worcestershire sauce. Scrape the bottom of the pan to release those flavorful bits. Cook for another 5-10 minutes until the onions are dark and caramelized.
Add Orzo: Stir in uncooked orzo, bay leaves, salt, black pepper, and dried thyme. Toast the orzo gently for about 2 minutes, stirring every 30 seconds to avoid sticking.
Combine Ingredients: Add the cooked chicken and chicken stock to the pot. Cover and cook for 10 minutes, stirring frequently to prevent sticking.
Finish with Cheese: Remove the bay leaves and stir in shredded cheese until melted. It should be creamy and gooey.

Switch It Up: Easy Variations
I love finding new ways to mix things up in the kitchen, especially on busy nights. Here are a few variations you can try with this recipe if you’re feeling adventurous:
Chicken Breasts Alternative: You can swap in boneless chicken thighs or chicken tenders instead of chicken breasts. They bring a slightly different texture and flavor to the dish.
Broth Variation: Feel free to use any type of broth or stock you have on hand—beef, chicken, or vegetable all work interchangeably. It’ll still turn out great!
Olive Oil Substitute: If you’re out of olive oil, you can use avocado oil, butter, or ghee.

Keeping the Goodness Fresh
Store any leftovers in an airtight container in the fridge for up to 3-4 days. If you want to keep it longer, you can freeze it for up to 3 months. Just make sure to let it cool completely before sealing it up, so you don’t end up with condensation in the container.
When you’re ready to reheat, use the stovetop on low heat, adding a splash of chicken stock to keep it creamy. Stir often to prevent sticking and burning. It should come back to life nicely, and you’ll be ready to enjoy it again!

One Pot French Onion Orzo with Chicken for Cozy Weeknights
Ingredients
Method
- Remove the chicken from the packaging and cube chicken in 1/2 inch pieces by cutting into even strips and slicing on a cutting board.
- Heat olive oil in a pan over medium high heat for 2-3 minutes or until the oil begins to shimmer.
- Cook cubed chicken on medium high heat for 5-7 minutes or until golden brown. (If there is some excess liquid released during the cooking process of the chicken, remove some of the liquid by placing a few paper towels in the bottom of the pan and discarding. Removing some of the liquid will allow for a nice golden brown exterior on the chicken.)
- While the chicken is cooking, chop your onions and garlic and measure out the spices.
- Remove the cooked chicken from the pan and set aside in a small bowl. Lower the heat to medium.
- Add the butter to the pan with chopped onions and garlic, stir together with a spatula.
- Cook the onions and garlic uncovered for 5 minutes.
- Add ¼ cup of chicken stock and Worcestershire sauce to the pot, stir together and scrape the bottom of the pan to remove any bits stuck on the bottom of the pan. Cook for another 5-10 minutes or until the onions start to get dark and caramelized.
- Add the orzo, bay leaves, salt, pepper, and dried thyme to the pan and stir together, allowing the orzo to toast gently for about 2 minutes, stirring every 30 seconds so it doesn’t stick to the bottom of the pan.
- Add the cooked chicken and chicken stock to the pot. Cover the pot and cook for 10 minutes, stirring frequently so the orzo does not stick to the bottom (about every 2 minutes).
- Remove the bay leaves from the pot and discard.
- Add your shredded cheese to the pot and stir together until it’s melted into the sauce, serve and enjoy!
