  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (28 oz) whole peeled tomatoes
  • 1 can (13.5 oz) full-fat coconut milk
  • 4 tablespoons butter
  • 2 teaspoons cumin
  • 2 teaspoons coriander
  • 1 teaspoon turmeric
  • Salt & pepper to taste

Instructions

  1. Cut the chicken into bite-sized pieces.
  2. In a skillet over medium heat, melt butter and sauté garlic and ginger until fragrant.
  3. Transfer aromatics to the crockpot and add canned tomatoes, coconut milk, spices, salt, and pepper.
  4. Stir well to coat the chicken evenly.
