These cheesy garlic zucchini steaks are the perfect low-carb side dish or snack! Juicy, tender zucchini topped with melted cheese and a hint of garlic flavor make this an irresistible recipe.


Ingredients

  • 2 large zucchinis
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 400°F (200°C).
  • Slice zucchinis into thick steaks and place them on a baking sheet lined with parchment paper.
  • Brush the zucchini steaks with olive oil and season with salt, pepper, and oregano.
  • Sprinkle minced garlic evenly over the zucchini.
  • Bake for 10 minutes, then remove from the oven and top with mozzarella and Parmesan cheeses.
  • Return to the oven and bake for another 5 minutes or until the cheese is melted and bubbly.
