Description

Ingredients

  • 1 lb Italian sausage
  • 4 cups chicken broth
  • 3 medium potatoes, thinly sliced
  • 1 cup heavy cream
  • 4 cups chopped kale
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Crushed red pepper flakes (optional)

Instructions

  • Prepare the base: Heat olive oil in a large pot over medium heat. Sauté the onion and garlic until fragrant. Add the sausage, breaking it apart, and cook until browned.
  • Cook the potatoes: Pour in chicken broth and bring to a boil. Add sliced potatoes, reduce heat, and simmer until tender, about 15 minutes.
  • Add the cream and kale: Stir in the heavy cream and kale, cooking until the kale wilts, about 5 minutes.
  • Season and serve: Add salt, pepper, and red pepper flakes to taste. Serve hot with crusty bread if desired

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
