- 4 cups chicken broth
- 3 medium potatoes, thinly sliced
- 1 cup heavy cream
- 4 cups chopped kale
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Crushed red pepper flakes (optional)
Instructions
- Prepare the base: Heat olive oil in a large pot over medium heat. Sauté the onion and garlic until fragrant. Add the sausage, breaking it apart, and cook until browned.
- Cook the potatoes: Pour in chicken broth and bring to a boil. Add sliced potatoes, reduce heat, and simmer until tender, about 15 minutes.
- Add the cream and kale: Stir in the heavy cream and kale, cooking until the kale wilts, about 5 minutes.
- Season and serve: Add salt, pepper, and red pepper flakes to taste. Serve hot with crusty bread if desired
