Ingredients

Scale
  • 1 cup long-grain rice (basmati or jasmine)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime (approximately 2 tablespoons)
  • 2 garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse rice under cold water until clear. In a medium saucepan, combine rinsed rice, 2 cups of water, and a pinch of salt. Bring to a boil over medium heat.
  2. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes until all water is absorbed. Remove from heat and let sit for an additional 5 minutes.
  3. While the rice cooks, chop cilantro and mince garlic.
  4. Fluff the cooked rice with a fork and mix in cilantro, garlic, lime juice, and olive oil.
  5. Toss well to combine, adjusting seasoning with salt and pepper as needed.
  6. Serve warm or chilled, garnished with extra cilantro or lime wedges.
