Ingredients
  

Pasta
  • 12 ounces tortellini fresh or frozen
Vegetables
  • 1 cup cherry tomatoes ripe and vibrant
  • 1 cucumber crisp
  • 1 small red onion finely chopped
  • 1 bell peppers various colors
  • 1 cup fresh basil leaves
Dressing
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons balsamic vinegar
  • to taste salt
  • to taste pepper
Cheese
  • 1/2 cup parmesan cheese grated or shaved

Method
 

Prepare the Tortellini
  1. Start by bringing a large pot of salted water to a rolling boil. Once boiling, add 12 ounces of tortellini and cook according to package instructions, usually around 3-5 minutes. Stir occasionally to prevent sticking.
  2. After the tortellini are cooked, carefully drain them in a colander. Rinse under cold water until they feel cool to the touch to stop the cooking process.
Prepare the Veggies
  1. While your tortellini cools, chop up your favorite vegetables including cherry tomatoes, cucumber, red onion, and bell peppers.
Combine and Serve
  1. In a large bowl, combine the cooled tortellini, chopped vegetables, fresh basil, and dressing ingredients. Toss gently to combine and serve immediately or chill in the refrigerator for later.
