Prepare the Tortellini
- Start by bringing a large pot of salted water to a rolling boil. Once boiling, add 12 ounces of tortellini and cook according to package instructions, usually around 3-5 minutes. Stir occasionally to prevent sticking.
- After the tortellini are cooked, carefully drain them in a colander. Rinse under cold water until they feel cool to the touch to stop the cooking process.
Prepare the Veggies
- While your tortellini cools, chop up your favorite vegetables including cherry tomatoes, cucumber, red onion, and bell peppers.
Combine and Serve
- In a large bowl, combine the cooled tortellini, chopped vegetables, fresh basil, and dressing ingredients. Toss gently to combine and serve immediately or chill in the refrigerator for later.
