- Cook the beef: Heat oil in a large pan over medium heat. Add onion and cook for 5–6 minutes until golden. Stir in garlic and cook for 1 minute. Increase heat to high, add ground beef, and cook until browned, about 5 minutes, breaking it apart with a spoon.
- Season: Add paprika, oregano, cumin, chili flakes, salt, and pepper. Stir in tomato paste, then pour in beef stock. Cook for 3–4 minutes until slightly thickened. Remove from heat.
- Assemble: Place a tortilla on a clean surface. Layer with rice, 3–4 tablespoons of beef mixture. Fold the sides inward, then roll tightly into a burrito.
- Toast & serve: Heat a dry pan over high heat and toast each burrito until golden on all sides. Serve warm and enjoy!
