taco tater tot casserole

Ingredients
  

Casserole Base
  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 1 cup black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup salsa
Topping
  • 1 bag tater tots 32 oz bag
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream for serving

Method
 

Prepare the Casserole
  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Add the taco seasoning, black beans, corn, and salsa to the skillet. Stir to combine and heat through.
  4. Transfer the mixture to a 9x13 inch baking dish, spreading it evenly.
Add Tater Tots and Bake
  1. Arrange the tater tots in a single layer over the beef mixture.
  2. Sprinkle shredded cheese on top of the tater tots.
  3. Bake in the preheated oven for 25-30 minutes, or until the tater tots are golden brown and crispy.
  4. Let cool for a few minutes before serving with sour cream.
