Ingredients
  

For the Salad
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning or homemade
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup cheddar cheese shredded
  • 1 cup tortilla chips crushed
  • 1 avocado sliced
  • 1 cup sour cream for topping
For the Dressing
  • 1 cup ranch dressing
  • 1 tbsp lime juice freshly squeezed

Method
 

Prepare the Beef
  1. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add taco seasoning and water according to package instructions. Simmer for 5 minutes.
Assemble the Salad
  1. In a large mixing bowl, combine chopped romaine lettuce, cherry tomatoes, black beans, corn, and shredded cheese.
  2. Add the cooked beef to the salad mixture and toss to combine.
  3. Drizzle ranch dressing mixed with lime juice over the salad and toss again.
  4. Serve the salad on a platter and top with crushed tortilla chips, sliced avocado, and dollops of sour cream.
