  • 1 medium Red Onion Finely chopped
  • 1/4 cup Fresh Cilantro Chopped
  • 2 tablespoons Lime Juice Freshly squeezed
  • 1/2 cup Mexican Crema Can substitute with sour cream
  • 1/2 cup Queso Fresco Crumbled
  • 1 cup Rice Long-grain or jasmine
  • 1 teaspoon Chili Powder Adjust to taste
  • 1 teaspoon Cumin Ground
  • to taste Salt and Pepper For seasoning
  • 2 tablespoons Olive Oil For cooking

Method
 

Preparation
  1. Gather all ingredients including cooked chicken, rice, fresh corn, lime, cilantro, and seasonings. Rinse rice under cold water until it runs clear.
Cooking Rice
  1. In a medium saucepan, combine one cup of rinsed rice with two cups of water and a pinch of salt. Bring to a gentle boil, reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed and rice is tender.
Sautéing Corn
  1. While the rice is resting, heat a skillet over medium heat and sauté the corn until slightly charred and tender.
