Ingredients
  

Beef and Marinade
  • 1 pound flank steak sliced thinly against the grain
  • 2 tablespoons soy sauce for marinade
  • 1 tablespoon cornstarch for marinade
  • 1 tablespoon vegetable oil for cooking
Noodles and Sauce
  • 8 ounces rice noodles or egg noodles
  • 3 tablespoons hoisin sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger minced
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup broccoli florets
  • 1 cup carrots sliced
  • 2 scallions sliced for garnish

Method
 

Marinate the Beef
  1. In a bowl, combine the sliced flank steak, soy sauce, and cornstarch. Mix well and let it marinate for at least 15 minutes.
Prepare the Noodles
  1. Cook the rice noodles according to package instructions. Drain and set aside.
Stir-Fry
  1. Heat vegetable oil in a wok over high heat. Add the marinated beef and stir-fry until browned, about 3-4 minutes.
  2. Add the bell pepper, broccoli, and carrots. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  3. In a small bowl, mix hoisin sauce, oyster sauce, sesame oil, sugar, garlic, and ginger. Pour the sauce over the beef and vegetables.
  4. Add the cooked noodles to the wok and toss everything together until well coated in the sauce. Cook for an additional 2 minutes.
Serve
  1. Serve hot, garnished with sliced scallions.

Feel free to customize the vegetables based on your preference. You can also add chili flakes for some heat.
