Ingredients
  

Egg Mixture
  • 6 large eggs large eggs
  • 1 cup egg whites liquid egg whites or fresh
  • 1 cup cheese shredded cheddar or Gruyère
  • 1 cup spinach fresh, chopped
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste
Optional Add-ins
  • 1 cup cooked bacon chopped
  • 1 cup bell peppers diced
  • 1 cup mushrooms sautéed and chopped

Method
 

Prepare the Egg Mixture
  1. Preheat the oven to 325°F (160°C). Grease a muffin tin with cooking spray or oil.
  2. In a blender, combine the eggs, egg whites, cheese, spinach, salt, and pepper. Blend until smooth.
Fill the Muffin Tin
  1. If using, add any optional ingredients like bacon, bell peppers, or mushrooms to the bottom of each muffin cup.
  2. Pour the egg mixture evenly into each muffin cup, filling them about 3/4 full.
Bake
  1. Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the egg bites are set and slightly golden on top.
  2. Remove from the oven and let cool for a few minutes before gently removing the egg bites from the tin.
