Method
Prepare the Egg Mixture
- Preheat the oven to 325°F (160°C). Grease a muffin tin with cooking spray or oil.
- In a blender, combine the eggs, egg whites, cheese, spinach, salt, and pepper. Blend until smooth.
Fill the Muffin Tin
- If using, add any optional ingredients like bacon, bell peppers, or mushrooms to the bottom of each muffin cup.
- Pour the egg mixture evenly into each muffin cup, filling them about 3/4 full.
Bake
- Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the egg bites are set and slightly golden on top.
- Remove from the oven and let cool for a few minutes before gently removing the egg bites from the tin.
