Preparation
- Preheat the oven to 350°F (175°C), and grease and flour a 9-inch round cake pan.
- Prepare the cherries by rinsing them under cool water. Pat them dry, pit, and halve them.
- Cream the butter and sugar together in a mixing bowl until light and fluffy—about 3 minutes.
- Incorporate the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Whisk together flour, baking powder, and salt in another bowl. Gradually add this mixture to the wet ingredients while mixing on low speed.
- Fold in most of the cherries with a gentle hand until just combined. Pour the batter into the prepared pan and top with the reserved cherries.
- Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
