Preparation
  1. Preheat the oven to 350°F (175°C), and grease and flour a 9-inch round cake pan.
  2. Prepare the cherries by rinsing them under cool water. Pat them dry, pit, and halve them.
  3. Cream the butter and sugar together in a mixing bowl until light and fluffy—about 3 minutes.
  4. Incorporate the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Whisk together flour, baking powder, and salt in another bowl. Gradually add this mixture to the wet ingredients while mixing on low speed.
  6. Fold in most of the cherries with a gentle hand until just combined. Pour the batter into the prepared pan and top with the reserved cherries.
  7. Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
