Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Place boneless chicken breasts in a large mixing bowl. Drizzle with olive oil and sprinkle generously with salt and pepper. Massage those flavors into every nook and cranny.
  3. In another bowl, whisk together fresh lemon juice, minced garlic, chopped parsley, and thyme. Pour this mixture over the chicken to marinate while you prep the veggies.
  4. Slice your chosen vegetables into bite-sized pieces and toss them onto a sheet pan. Drizzle lightly with olive oil and season with salt and pepper.
  5. Nestle the marinated chicken among the vegetables on the sheet pan. Ensure everything is evenly spread out.
  6. Slide the sheet pan into your preheated oven and let it bake for about 25-30 minutes until everything is cooked through and beautifully caramelized.
  7. Once done, remove from oven and let rest briefly before serving.
