Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup salsa your choice of mild or spicy
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream optional
  • 1 cup chopped cilantro optional

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the crockpot.
  2. Pour the salsa over the chicken, ensuring it is well coated.
  3. Add the black beans, corn, cumin, chili powder, garlic powder, salt, and black pepper on top.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours until the chicken is cooked through and tender.
Serving
  1. Once cooked, shred the chicken using two forks and mix it with the salsa and beans.
  2. Serve warm, topped with shredded cheese, sour cream, and cilantro if desired.
