Ingredients
  

Casserole Base
  • 4 cups corn kernels fresh or frozen
  • 1 cup mayonnaise preferably Mexican crema
  • 1 cup sour cream
  • 1 cup crumbled cotija cheese or feta cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup shredded cheddar cheese for topping
  • 2 tablespoons fresh cilantro chopped, for garnish

Method
 

Prepare the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine corn kernels, mayonnaise, sour cream, cotija cheese, chili powder, cumin, garlic powder, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
  3. Transfer the mixture into a greased 9x13 inch baking dish and spread evenly.
  4. Sprinkle shredded cheddar cheese on top of the corn mixture.
  5. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and let it cool for a few minutes before garnishing with fresh cilantro.

Notes

This casserole can be made ahead of time and stored in the refrigerator before baking. Just add a few extra minutes to the baking time if baking from cold.
