Prepare the Casserole
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine corn kernels, mayonnaise, sour cream, cotija cheese, chili powder, cumin, garlic powder, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
- Transfer the mixture into a greased 9x13 inch baking dish and spread evenly.
- Sprinkle shredded cheddar cheese on top of the corn mixture.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before garnishing with fresh cilantro.

This casserole can be made ahead of time and stored in the refrigerator before baking. Just add a few extra minutes to the baking time if baking from cold.
