Butter Beans
  • 2 cups butter beans cooked or canned
  • 1 cup vegetable broth low sodium
  • 1 tablespoon olive oil extra virgin
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon lemon juice freshly squeezed
  • 2 tablespoons fresh parsley chopped

Method
 

Cooking the Butter Beans
  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  2. Add the cooked or canned butter beans to the pot, along with the vegetable broth, thyme, smoked paprika, salt, and black pepper.
  3. Stir well and bring the mixture to a simmer. Cook for about 15-20 minutes, allowing the flavors to meld.
  4. Stir in the lemon juice and chopped parsley just before serving.
