Cooking the Butter Beans
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the cooked or canned butter beans to the pot, along with the vegetable broth, thyme, smoked paprika, salt, and black pepper.
- Stir well and bring the mixture to a simmer. Cook for about 15-20 minutes, allowing the flavors to meld.
- Stir in the lemon juice and chopped parsley just before serving.
