How to Make Homemade Pasta
- On a large, clean work surface, create a mountain of flour, then form a deep well in the center for the eggs.
- Crack the three eggs into the well. Sprinkle the salt and drizzle the olive oil over the eggs.
- With a fork, gently beat the eggs, slowly incorporating the flour from the edges of the well.
- Once the mixture becomes too thick for the fork, switch to using your hands. Bring the dough together.
- Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.
- Wrap the kneaded dough tightly in plastic wrap and let it rest at room temperature for 30 minutes.
- After resting, divide the dough into four equal portions. Keep covered to prevent drying out.
- Roll out one portion on a floured surface until it's very thin, about 1/16 inch thick.
- Using a sharp knife or pasta cutter, cut the rolled sheets into your desired pasta shape.
- Bring a large pot of salted water to a boil. Carefully add the fresh pasta and cook for 2-3 minutes.
- Drain the pasta and toss it with your favorite sauce while it’s still hot.
