How to Make Homemade Pasta
  1. On a large, clean work surface, create a mountain of flour, then form a deep well in the center for the eggs.
  2. Crack the three eggs into the well. Sprinkle the salt and drizzle the olive oil over the eggs.
  3. With a fork, gently beat the eggs, slowly incorporating the flour from the edges of the well.
  4. Once the mixture becomes too thick for the fork, switch to using your hands. Bring the dough together.
  5. Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.
  6. Wrap the kneaded dough tightly in plastic wrap and let it rest at room temperature for 30 minutes.
  7. After resting, divide the dough into four equal portions. Keep covered to prevent drying out.
  8. Roll out one portion on a floured surface until it's very thin, about 1/16 inch thick.
  9. Using a sharp knife or pasta cutter, cut the rolled sheets into your desired pasta shape.
  10. Bring a large pot of salted water to a boil. Carefully add the fresh pasta and cook for 2-3 minutes.
  11. Drain the pasta and toss it with your favorite sauce while it’s still hot.
