Potatoes
  • 2 lbs potatoes peeled and sliced into 1/4-inch rounds; Yukon gold are ideal
  • 1/2 cup unsalted butter can substitute with olive oil
  • 1 cup heavy cream can use half-and-half for lower calories
  • 1 tsp onion powder or use fresh onions for more flavor
  • 1 tsp garlic powder or substitute with minced garlic
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Peel and slice the potatoes into quarter-inch rounds.
  2. Boil the sliced potatoes in salted water for about 8 minutes until tender. Drain well.
  3. Melt the butter in a saucepan over medium heat. Whisk in the heavy cream, onion powder, and garlic powder until the mixture bubbles gently. Simmer for about 5 minutes.
  4. Layer the cooked potatoes in a greased baking dish and pour the creamy sauce over them.
  5. Cover the dish with foil and bake for 30 minutes. Remove foil halfway through for a golden finish.
  6. Garnish with fresh chopped parsley just before serving.
