How to Make Date and Orange Loaf Cake
- Preheat the oven to 350°F (175°C). Grease a standard loaf pan lightly with butter or cooking spray.
- Whisk together 1 ½ cups of all-purpose flour, 1 tsp baking powder, and a pinch of salt in a bowl.
- Cream ½ cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy.
- Beat in 2 large eggs one at a time. Incorporate the zest and juice of 2 fresh oranges and 1 tsp vanilla extract.
- Gradually add the dry ingredients to the wet mixture until just combined, then fold in 1 cup of pitted and chopped dried dates.
- Pour the batter into the greased loaf pan and smooth the top. Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool the loaf slightly in the pan before transferring it onto a wire rack. Mix 1 cup of powdered sugar with 2 tbsp of freshly squeezed orange juice until smooth and spread over the warm loaf.
