How to Make Date and Orange Loaf Cake
  1. Preheat the oven to 350°F (175°C). Grease a standard loaf pan lightly with butter or cooking spray.
  2. Whisk together 1 ½ cups of all-purpose flour, 1 tsp baking powder, and a pinch of salt in a bowl.
  3. Cream ½ cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy.
  4. Beat in 2 large eggs one at a time. Incorporate the zest and juice of 2 fresh oranges and 1 tsp vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture until just combined, then fold in 1 cup of pitted and chopped dried dates.
