Hot Honey Sweet Potato Beef Bowl for Weeknight Meals

Ingredients
  

  • 2 medium sweet potatoes
  • 2 tablespoons or avocado oil, divided olive oil
  • 30 grams or 1 store-bought packet taco seasoning
  • 500 grams beef mince
  • 2 cups dairy free cottage cheese
  • 1 avocado
  • 1 - 2 tablespoons hot honey

Method
 

  1. Wash the sweet potatoes and peel them if you prefer. Cut them into 2.5 cm (1-inch) cubes.
  2. In a bowl, toss the sweet potatoes with 1 tablespoon of olive oil and 1 teaspoon of taco seasoning until evenly coated.
  3. Add the sweet potatoes to the air fryer basket in a single layer. Cook at 200°C (400°F) for 20 minutes, shaking the basket occasionally to ensure even cooking.
  4. While the sweet potatoes are cooking, heat the remaining 1 tablespoon of oil in a large frying pan over medium heat. Add the beef mince and cook, breaking it apart with a wooden spoon, until browned.
  5. Stir in the remaining taco seasoning along with a splash of water. Continue cooking until the mince is fully browned and any excess liquid has evaporated.
  6. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork and season with salt if desired.
  7. Divide the cooked sweet potatoes between four bowls or meal prep containers. Add the beef mince on top.
  8. If serving immediately, top each bowl with a scoop of dairy-free cottage cheese, a dollop of mashed avocado, and drizzle with hot honey to taste.

Notes
