  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 1 cup carrots shredded
Chicken
  • 2 cups cooked chicken breast diced or shredded
Honey Mustard Dressing
  • 1 tablespoon honey
  • 2 tablespoons Dijon mustard
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 pinch salt
  • 1 pinch black pepper

Method
 

Prepare the Chicken
  1. Grill or pan-sear the chicken breast until fully cooked, about 6-7 minutes per side. Let it rest, then dice or shred.
Make the Dressing
  1. In a mixing bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, salt, and pepper until well combined.
Assemble the Salad
  1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, carrots, and cooked chicken. Drizzle with honey mustard dressing and toss gently to combine.
