Prepare the Soup
- In a large pot, combine the ham bone and water (or broth). Bring to a boil over medium-high heat.
- Reduce heat to low and simmer for about 1 hour to extract the flavors from the bone.
- Add the diced carrots, celery, onion, garlic, potatoes, canned tomatoes, green beans, thyme, salt, and pepper.
- Continue to simmer for another 30-60 minutes, until the vegetables are tender.
- Remove the ham bone, shred any remaining meat, and return the meat to the pot.
- Stir in the cooked beans and heat through for an additional 5-10 minutes.
- Taste and adjust seasoning if necessary before serving.
