Ingredients
  

Soup Base
  • 1 bone ham bone with some meat still attached
  • 8 cups water or chicken broth for more flavor
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 cup potatoes diced
  • 1 can canned diced tomatoes 14.5 oz
  • 1 cup green beans fresh or frozen
  • 1 teaspoon thyme dried
  • 1 teaspoon black pepper to taste
  • 1 teaspoon salt to taste
  • 1 cup cooked beans such as white beans or kidney beans

Method
 

Prepare the Soup
  1. In a large pot, combine the ham bone and water (or broth). Bring to a boil over medium-high heat.
  2. Reduce heat to low and simmer for about 1 hour to extract the flavors from the bone.
  3. Add the diced carrots, celery, onion, garlic, potatoes, canned tomatoes, green beans, thyme, salt, and pepper.
  4. Continue to simmer for another 30-60 minutes, until the vegetables are tender.
  5. Remove the ham bone, shred any remaining meat, and return the meat to the pot.
  6. Stir in the cooked beans and heat through for an additional 5-10 minutes.
  7. Taste and adjust seasoning if necessary before serving.

Notes
