How to Make Garlic Parmesan Chicken and Potatoes
  1. Preheat your oven to 400°F (200°C).
  2. Prepare your baking dish by spraying it with nonstick cooking spray.
  3. Season the chicken breasts generously with salt, pepper, and half of the dried Italian herbs.
  4. Mix in a bowl the minced garlic, extra virgin olive oil, grated Parmesan cheese, and the remaining herbs.
  5. Arrange the seasoned chicken in the baking dish, placing the halved baby potatoes around them.
  6. Drizzle the garlic-Parmesan mixture generously over the chicken and potatoes.
  7. Bake for 25–30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
