  • 1 cup arugula washed and dried
  • 1 medium orange peeled and segmented
  • 1 medium lemon juiced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey optional
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste

Method
 

Prepare the Salad
  1. In a mixing bowl, combine the sliced fennel, arugula, and orange segments.
  2. In a separate small bowl, whisk together the lemon juice, olive oil, honey, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to combine.
