Ingredients

Chicken Wings
  • 2 pounds chicken wings split at the joints
Marinade
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine
  • 1 tablespoon five-spice powder
  • 1 teaspoon ginger grated
  • 1 teaspoon garlic minced
  • 1 teaspoon black pepper
  • 1 teaspoon salt
Breading
  • 1 cup all-purpose flour
  • 1 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Oil
  • 4 cups vegetable oil for frying

Method

Marinate the Chicken
  1. In a mixing bowl, combine soy sauce, rice wine, five-spice powder, ginger, garlic, black pepper, and salt. Add the chicken wings and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes.
Prepare the Breading
  1. In another bowl, mix together flour, cornstarch, baking powder, salt, and black pepper.
Heat the Oil
  1. In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).
Bread the Chicken
  1. Remove the wings from the marinade, allowing excess to drip off. Dredge each wing in the flour mixture, ensuring they are well-coated.
Fry the Chicken
  1. Carefully add the breaded wings to the hot oil in batches. Fry for about 8-10 minutes or until golden brown and cooked through. Use tongs to turn them occasionally.
Drain and Serve
  1. Remove the wings from the oil and drain on paper towels. Serve hot with your favorite dipping sauce.
