Ingredients
  

Chicken Marinade
  • 1 pound boneless, skinless chicken breasts cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon lemon juice
Vegetables (optional)
  • 1 bell pepper cut into pieces any color
  • 1 medium onion cut into wedges
  • 1 zucchini sliced

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, soy sauce, honey, minced garlic, paprika, cumin, salt, pepper, and lemon juice. Mix well.
  2. Add the chicken cubes to the marinade and stir to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Prepare the Skewers
  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. Thread the marinated chicken and optional vegetables onto the skewers, alternating between chicken and vegetables.
Grill the Skewers
  1. Preheat the grill to medium-high heat. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  2. Remove from the grill and let rest for a few minutes before serving.

Notes

Serve with a side of tzatziki sauce or your favorite dipping sauce. These skewers can also be made in the oven if a grill is not available.
