How to Make Cherry Vanilla Shortbread Tart
  1. Preheat your oven to 350°F (175°C) and gently grease a tart pan.
  2. Cream together the softened butter and granulated sugar in a mixing bowl until light and fluffy.
  3. Combine the all-purpose flour and a pinch of salt into the butter mixture. Mix until a soft dough forms.
  4. Press the dough evenly into the bottom and up the sides of your prepared tart pan.
  5. Mix the pitted fresh cherries with sugar and pure vanilla extract in another bowl. Toss gently to coat.
  6. Pour the cherry mixture over the crust, spreading it out evenly.
  7. Bake in the preheated oven for 30-35 minutes until the crust is golden brown and cherries bubble.
  8. Cool the tart completely before slicing. Serve with whipped cream or a scoop of ice cream.
