Ingredients
  

Pasta
  • 8 oz fusilli or penne for their ability to hold onto the dressing
Fresh Ingredients
  • 1 cup cherry tomatoes ripe and sweet, halved
  • 8 oz fresh mozzarella balls bocconcini or ciliegine
  • 1 cup fresh basil leaves torn into smaller pieces
Dressings
  • 3 tbsp extra virgin olive oil drizzled generously
  • 1 tbsp balsamic vinegar or balsamic glaze for sweetness
  • to taste salt to bring flavors together
  • to taste black pepper freshly cracked

Method
 

Cooking the Pasta
  1. Start by bringing a large pot of salted water to a boil. Add your chosen pasta and cook according to package instructions until al dente. Drain and let cool slightly.
Preparing Fresh Ingredients
  1. While the pasta cools, slice your cherry tomatoes in half and tear fresh basil leaves into smaller pieces.
Combining Ingredients
  1. In a large mixing bowl, combine the cooled pasta, halved tomatoes, mozzarella balls, and basil. Drizzle with olive oil and balsamic vinegar.
Seasoning
  1. Sprinkle salt and freshly cracked black pepper over your salad. Toss gently until everything is nicely coated in dressing while keeping those mozzarella balls intact.
Chilling
  1. Let the salad sit in the fridge for about 15-30 minutes before serving to allow flavors to mingle.
