Ingredients
  

Chicken
  • 2 pounds chicken, cut into pieces preferably bone-in
Marinade
  • 1 tablespoon soy sauce
  • 1 tablespoon browning sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme dried or fresh
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 medium onion, chopped
  • 1 medium scallion, chopped
  • 1 medium bell pepper, chopped
Cooking
  • 2 tablespoons vegetable oil
  • 2 cups water
  • 2 medium carrots, sliced
  • 1 medium tomato, chopped
  • 1 teaspoon allspice
  • 1 teaspoon bay leaf

Method
 

Marinate the Chicken
  1. In a large bowl, combine the chicken pieces with soy sauce, browning sauce, salt, black pepper, thyme, garlic, ginger, onion, scallion, and bell pepper. Mix well and let marinate for at least 30 minutes, preferably overnight in the refrigerator.
Brown the Chicken
  1. Heat vegetable oil in a large pot over medium-high heat. Add the marinated chicken pieces and brown on all sides, about 5-7 minutes.
Cook the Stew
  1. Add water, carrots, tomato, allspice, and bay leaf to the pot. Bring to a boil, then reduce heat to low. Cover and simmer for about 45 minutes, or until the chicken is tender and cooked through.
Serve
  1. Remove the bay leaf before serving. Serve the brown stew chicken with rice and peas or your choice of side.
