Ingredients
  

Brisket
  • 2 pounds beef brisket trimmed
  • 1 tablespoon olive oil for searing
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 tablespoon smoked paprika
  • 1 tablespoon cumin
  • 1 cup beef broth
  • 1 onion large onion sliced
  • 4 cloves garlic minced
Taco Assembly
  • 8 small corn tortillas warmed
  • 1 cup fresh cilantro chopped
  • 1 cup red onion diced
  • 1 cup lime wedges
  • 1 cup sour cream for serving
  • 1 cup salsa for serving

Method
 

Prepare the Brisket
  1. Season the brisket with salt, pepper, smoked paprika, and cumin.
  2. Heat olive oil in a skillet over medium-high heat and sear the brisket on all sides until browned.
  3. Place the seared brisket in a slow cooker. Add sliced onion, minced garlic, and beef broth.
  4. Cover and cook on low for 6-8 hours or until the brisket is tender.
Assemble the Tacos
  1. Once the brisket is cooked, remove it from the slow cooker and let it rest for 10 minutes.
  2. Shred the brisket using two forks.
  3. Warm the corn tortillas and fill each with shredded brisket.
  4. Top with cilantro, diced red onion, and a squeeze of lime. Serve with sour cream and salsa.
