Ingredients
  

Filling
  • 4 cups fresh blackberries washed and drained
  • 1 cup granulated sugar divided
  • 2 tablespoons cornstarch for thickening
  • 1 teaspoon lemon juice freshly squeezed
  • 1 teaspoon vanilla extract
Topping
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1 tsp baking powder
  • 1 2 tablespoons unsalted butter melted
  • 1 cup brown sugar
  • 1 1/2 teaspoon salt

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine blackberries, 1/2 cup of granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently toss to coat the blackberries.
  3. Pour the blackberry mixture into a greased baking dish.
Make the Topping
  1. In another bowl, whisk together flour, baking powder, remaining sugar, and salt.
  2. Stir in milk and melted butter until just combined.
  3. Pour the topping mixture over the blackberries in the baking dish, spreading it evenly.
Bake the Cobbler
  1. Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and a toothpick inserted comes out clean.
  2. Let cool for a few minutes before serving.
