Ingredients
  

Salad Base
  • 4 medium beets roasted and diced
  • 4 cups mixed greens such as arugula, spinach, and kale
  • 1 cup feta cheese crumbled
  • 1 cup walnuts toasted and chopped
Vinaigrette
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 clove garlic minced
  • 1 pinch salt
  • 1 pinch black pepper

Method
 

Prepare the Beets
  1. Preheat the oven to 400°F (200°C). Wrap the beets in aluminum foil and place them on a baking sheet. Roast for about 45 minutes or until tender. Allow to cool, then peel and dice.
Make the Vinaigrette
  1. In a mixing bowl, whisk together the olive oil, balsamic vinegar, honey, minced garlic, salt, and black pepper until well combined.
Assemble the Salad
  1. In a large salad bowl, combine the mixed greens, roasted beets, crumbled feta cheese, and toasted walnuts. Drizzle with the vinaigrette and toss gently to combine.
