Method
Prepare the Ribs
- Remove the membrane from the back of the ribs for better flavor and tenderness.
- In a bowl, mix together all the dry rub ingredients.
- Rub the dry mixture all over the ribs, ensuring they are well coated. Let them sit for at least 30 minutes at room temperature.
Grill the Ribs
- Preheat the grill to a low heat, around 225°F (107°C).
- Place the ribs bone-side down on the grill. Close the lid and cook for about 3 to 4 hours, maintaining a consistent temperature.
- Baste the ribs with barbecue sauce during the last 30 minutes of cooking.
- Check the internal temperature of the ribs; they should reach at least 190°F (88°C) for optimal tenderness.
Serve
- Once cooked, remove the ribs from the grill and let them rest for 10 minutes.
- Slice between the bones and serve with additional barbecue sauce on the side.
