  • 2 cans (15 oz each) low-sodium navy beans, rinsed and drained
  • 6 slices thick-cut bacon, chopped
  • 1/2 cup brown sugar
  • 1/2 cup ketchup
  • 2 tbsp yellow mustard
  • 1 medium sweet onion, finely chopped
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 2 tbsp apple cider vinegar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the chopped bacon until crispy. Remove and set aside.
  3. In the same skillet with the bacon drippings, sauté the finely chopped onion until translucent (about 5 minutes).
  4. In a large bowl, combine the cooked bacon, sautéed onions, navy beans, brown sugar, ketchup, mustard, apple cider vinegar, smoked paprika, and black pepper.
  5. Transfer the mixture to a baking dish and cover with foil. Bake for about 45 minutes until bubbly.
  6. Let cool slightly before serving warm.
