- 2 cans (15 oz each) low-sodium navy beans, rinsed and drained
- 6 slices thick-cut bacon, chopped
- 1/2 cup brown sugar
- 1/2 cup ketchup
- 2 tbsp yellow mustard
- 1 medium sweet onion, finely chopped
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 2 tbsp apple cider vinegar
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the chopped bacon until crispy. Remove and set aside.
- In the same skillet with the bacon drippings, sauté the finely chopped onion until translucent (about 5 minutes).
- In a large bowl, combine the cooked bacon, sautéed onions, navy beans, brown sugar, ketchup, mustard, apple cider vinegar, smoked paprika, and black pepper.
- Transfer the mixture to a baking dish and cover with foil. Bake for about 45 minutes until bubbly.
- Let cool slightly before serving warm.
