Ingredients
- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 2 medium carrots, sliced thinly
- 2 celery stalks, diced
- 1 can (15 oz) diced tomatoes
- 4 cups fresh spinach or kale
- 6 cups chicken broth
- 2 tsp Italian seasoning
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onions, garlic, carrots, and celery; sauté for about 5 minutes until softened.
- Add boneless chicken breasts to the pot and pour in chicken broth until covered by at least an inch. Bring to a boil.
- Stir in diced tomatoes and Italian seasoning. Lower heat and simmer gently for 20 minutes.
- Add spinach or kale during the last 5 minutes until wilted. Remove chicken breasts from the pot.
- Shred the chicken with two forks and return it to the pot. Adjust salt and pepper as needed before serving hot with crusty bread.
