  • ½ cup creamy peanut butter
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 1 tsp toasted sesame oil
  • 1 tbsp honey or maple syrup

Instructions

  1. Boil water in a pot and cook the rice noodles for 4–6 minutes until tender but slightly firm. Drain and rinse under cold water.
  2. While the noodles cook, chop the cucumber, bell pepper, and carrots into thin strips.
  3. In a mixing bowl, whisk together peanut butter, soy sauce, lime juice, sesame oil, and honey or maple syrup until smooth.
  4. In serving bowls, layer the cooked rice noodles followed by the chopped vegetables and herbs.
  5. Generously drizzle the peanut sauce over each bowl and toss gently if desired.
  6. Garnish with crushed peanuts and additional herbs. Serve immediately.
