Ingredients
- Large pasta shells
- Pumpkin purée
- Crumbled feta cheese
- Spinach, chopped
- Garlic, minced
- Red chili flakes
- Olive oil
- Parmesan cheese, grated
Instructions
- Cook Shells: Boil pasta shells until al dente. Drain and set aside.
- Prepare Filling: Sauté garlic and spinach in olive oil. Mix with pumpkin purée, feta, and chili flakes.
- Stuff Shells: Fill pasta shells with the pumpkin mixture and arrange in a baking dish.
- Bake: Top with Parmesan and bake at 375°F (190°C) for 20–25 minutes until golden.
