Ingredients

  • Large pasta shells
  • Pumpkin purée
  • Crumbled feta cheese
  • Spinach, chopped
  • Garlic, minced
  • Red chili flakes
  • Olive oil
  • Parmesan cheese, grated

Instructions

  1. Cook Shells: Boil pasta shells until al dente. Drain and set aside.
  2. Prepare Filling: Sauté garlic and spinach in olive oil. Mix with pumpkin purée, feta, and chili flakes.
  3. Stuff Shells: Fill pasta shells with the pumpkin mixture and arrange in a baking dish.
  4. Bake: Top with Parmesan and bake at 375°F (190°C) for 20–25 minutes until golden.
