Instructions

  1. Begin by browning the beef chuck roast in a skillet over medium-high heat for about 4-5 minutes on each side until browned.
  2. Transfer the browned roast to the slow cooker. Add chopped onions, minced garlic, sliced carrots, thyme, bay leaves, salt, and pepper.
  3. Pour the low-sodium beef broth over the ingredients in the slow cooker.
  4. Cover and cook on low for 8 hours or high for 4 hours.
  5. About 30 minutes before serving, cook the egg noodles according to package instructions. Drain well and gently mix into the slow cooker.
  6. Serve hot with fresh parsley on top for garnish.
