Description

A hearty Italian-inspired dish combining savory sausage, nutritious kale, and al dente pasta in a garlic-white wine sauce.


Ingredients

Scale
  • 1 lb Italian sausage, removed from casings
  • 1 large bunch kale, stems removed, chopped
  • 1 lb penne pasta
  • 4 garlic cloves, minced
  • 1/2 cup white wine
  • 1/4 cup olive oil
  • 1/2 cup grated Parmesan
  • Red pepper flakes, salt, and black pepper

Instructions

  • Cook pasta according to package directions. Reserve 1 cup pasta water.
  • Brown sausage in large skillet over medium heat (8-10 minutes).
  • Add garlic, cook 1 minute. Add wine, simmer 2 minutes.
  • Add kale, cook until wilted (3-4 minutes).
  • Toss with pasta, olive oil, and Parmesan. Add pasta water as needed.
  • Season with salt, pepper, and red pepper flakes.

Notes

  • Substitute spinach for kale if preferred
  • Use chicken sausage for a lighter version
  • Can be made ahead and reheated
