A hearty Italian-inspired dish combining savory sausage, nutritious kale, and al dente pasta in a garlic-white wine sauce.
Ingredients

- 1 lb Italian sausage, removed from casings
- 1 large bunch kale, stems removed, chopped
- 1 lb penne pasta
- 4 garlic cloves, minced
- 1/2 cup white wine
- 1/4 cup olive oil
- 1/2 cup grated Parmesan
- Red pepper flakes, salt, and black pepper
Instructions
- Cook pasta according to package directions. Reserve 1 cup pasta water.
- Brown sausage in large skillet over medium heat (8-10 minutes).
- Add garlic, cook 1 minute. Add wine, simmer 2 minutes.
- Add kale, cook until wilted (3-4 minutes).
- Toss with pasta, olive oil, and Parmesan. Add pasta water as needed.
- Season with salt, pepper, and red pepper flakes.
Notes
- Substitute spinach for kale if preferred
- Use chicken sausage for a lighter version
- Can be made ahead and reheated
