Ingredients

  • 1½ cups all-purpose flour
  • 1 cup pumpkin puree
  • ¾ cup butter, softened
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 1 egg
  • 1 cup chocolate chips
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1 tsp baking soda
  • ½ tsp salt

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Cream butter and sugars until fluffy. Beat in egg, pumpkin, and vanilla.
  • Mix dry ingredients separately, then combine with wet mixture.
  • Fold in chocolate chips.
  • Drop rounded tablespoons onto prepared sheets.
  • Bake 12-14 minutes until edges are lightly golden.
