- 1½ cups all-purpose flour
- 1 cup pumpkin puree
- ¾ cup butter, softened
- ¾ cup brown sugar
- ½ cup granulated sugar
- 1 egg
- 1 cup chocolate chips
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1 tsp baking soda
- ½ tsp salt
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream butter and sugars until fluffy. Beat in egg, pumpkin, and vanilla.
- Mix dry ingredients separately, then combine with wet mixture.
- Fold in chocolate chips.
- Drop rounded tablespoons onto prepared sheets.
- Bake 12-14 minutes until edges are lightly golden.
Notes
- Chill dough 30 minutes for thicker cookies
- Store in airtight container up to 5 days
