- 200g unsalted butter, melted
- 250g light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- Zest of 1 orange
- 250g plain flour
- 1/2 tsp baking powder
- 200g mincemeat
- 100g white chocolate chips
- Pinch of salt
Instructions
- Preheat oven to 180°C/350°F. Line a 20cm square tin with parchment paper.
- Mix melted butter and brown sugar until combined. Beat in eggs, vanilla, and orange zest.
- Fold in flour, baking powder, and salt until just combined. Stir through mincemeat and white chocolate chips.
- Pour into prepared tin, spread evenly. Bake for 25-30 minutes until golden and just set.
- Cool completely before cutting into squares.

- For extra indulgence, drizzle with melted white chocolate after cooling
