Ingredients

  • 200g unsalted butter, melted
  • 250g light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 1 orange
  • 250g plain flour
  • 1/2 tsp baking powder
  • 200g mincemeat
  • 100g white chocolate chips
  • Pinch of salt

Instructions

  • Preheat oven to 180°C/350°F. Line a 20cm square tin with parchment paper.
  • Mix melted butter and brown sugar until combined. Beat in eggs, vanilla, and orange zest.
  • Fold in flour, baking powder, and salt until just combined. Stir through mincemeat and white chocolate chips.
  • Pour into prepared tin, spread evenly. Bake for 25-30 minutes until golden and just set.
  • Cool completely before cutting into squares.

  • For extra indulgence, drizzle with melted white chocolate after cooling
