Description

A bright, citrusy pasta dish combining tender chicken, fresh lemon, and garlic in a light cream sauce.


Ingredients

  • 1 lb fettuccine pasta
  • 2 chicken breasts, diced
  • 3 lemons (juice and zest)
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese
  • 1/4 cup olive oil
  • Salt and pepper
  • Fresh parsley for garnish

Instructions

  • Cook pasta according to package directions. Reserve 1 cup pasta water.
  • Season chicken with salt and pepper. Sauté in olive oil until golden, 5-7 minutes.
  • Add garlic, lemon zest, and juice. Cook 1 minute.
  • Pour in cream and simmer 3-4 minutes until thickened.
  • Toss with pasta, cheese, and pasta water as needed.
  • Garnish with parsley and extra lemon zest.

Notes

  • For extra flavor, marinate chicken in lemon juice for 30 minutes
  • Use freshly grated parmesan for best results
  • Pasta water helps achieve desired sauce consistency
