Ingredients

- 1 lb fettuccine pasta
- 2 chicken breasts, diced
- 3 lemons (juice and zest)
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup parmesan cheese
- 1/4 cup olive oil
- Salt and pepper
- Fresh parsley for garnish
Instructions
- Cook pasta according to package directions. Reserve 1 cup pasta water.
- Season chicken with salt and pepper. Sauté in olive oil until golden, 5-7 minutes.
- Add garlic, lemon zest, and juice. Cook 1 minute.
- Pour in cream and simmer 3-4 minutes until thickened.
- Toss with pasta, cheese, and pasta water as needed.
- Garnish with parsley and extra lemon zest.
Notes
- For extra flavor, marinate chicken in lemon juice for 30 minutes
- Use freshly grated parmesan for best results
- Pasta water helps achieve desired sauce consistency
