Perfect for weeknight dinners or impressing guests, this recipe is both easy to make and highly customizable. With each bite, you’ll experience a delightful combination of textures and flavors that will transport your taste buds straight to flavor town.

Ingredients

Scale
  • 34 boneless skinless chicken breasts (about 1 lb)
  • 8 oz spaghetti or penne pasta
  • 2 cups bell peppers (mixed colors), chopped
  • 4 cloves fresh garlic, minced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 cup heavy cream
  • 1 tsp red pepper flakes (adjust to taste)
  • 2 tbsp extra virgin olive oil

Instructions

  1. Prepare your pasta by bringing a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, about 8-10 minutes.
  2. In a large skillet over medium heat, drizzle olive oil and add diced chicken breasts. Cook until golden brown and cooked through, about 5-7 minutes.
  3. Add chopped bell peppers and minced garlic to the skillet with the chicken. Sauté until the peppers soften and the garlic becomes fragrant—about 3 minutes.
  4. Pour in the canned diced tomatoes along with the heavy cream into the skillet. Stir well and let it simmer gently for about 5 minutes.
  5. Sprinkle red pepper flakes into the sauce based on your desired spice level. Taste and adjust seasoning if necessary.
  6. Drain the cooked pasta and add it directly into the skillet with the sauce. Toss everything together until the pasta is fully coated.
