Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and ginger.
- In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, oil, and vanilla until smooth.
- Gradually add dry ingredients to the wet mixture and stir until just combined.
- Pour batter into the prepared pan and bake for 25–30 minutes or until a toothpick comes out clean.
- Allow to cool completely before frosting with cream cheese frosting if desired.
