  • 2 tbsp soy sauce (low-sodium preferred)
  • 1 cup reserved pasta water

Instructions

  1. Preheat your oven to 375°F (190°C). Boil water in a large pot and cook spaghetti according to package instructions until al dente. Drain and reserve about 1 cup of pasta water.
  2. Season chicken breasts with garlic powder, salt, and pepper. In a skillet over medium heat, cook the chicken until golden brown on both sides, about 7 minutes per side.
  3. Remove the chicken from the skillet and let it rest. In the same skillet, sauté chopped bell peppers until tender, about 5 minutes. Add soy sauce and stir well.
  4. In a bowl, mix sour cream with half of the shredded Monterey Jack cheese along with reserved pasta water until smooth.
  5. Slice the cooked chicken and return it to the skillet with bell peppers. Pour in the creamy sauce mixture and cooked spaghetti; gently toss to combine.
  6. Transfer everything to an oven-safe dish and top with remaining Monterey Jack cheese. Bake uncovered for about 20 minutes or until bubbly and golden brown.
