Ingredients
Scale
- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz spaghetti
- 1 cup shredded Monterey Jack cheese
- 1 cup chopped fresh bell peppers (mixed colors)
- 1 cup sour cream
- 1 tsp garlic powder
- 2 tbsp soy sauce (low-sodium preferred)
- 1 cup reserved pasta water
Instructions
- Preheat your oven to 375°F (190°C). Boil water in a large pot and cook spaghetti according to package instructions until al dente. Drain and reserve about 1 cup of pasta water.
- Season chicken breasts with garlic powder, salt, and pepper. In a skillet over medium heat, cook the chicken until golden brown on both sides, about 7 minutes per side.
- Remove the chicken from the skillet and let it rest. In the same skillet, sauté chopped bell peppers until tender, about 5 minutes. Add soy sauce and stir well.
- In a bowl, mix sour cream with half of the shredded Monterey Jack cheese along with reserved pasta water until smooth.
- Slice the cooked chicken and return it to the skillet with bell peppers. Pour in the creamy sauce mixture and cooked spaghetti; gently toss to combine.
- Transfer everything to an oven-safe dish and top with remaining Monterey Jack cheese. Bake uncovered for about 20 minutes or until bubbly and golden brown.
