  • 2 cups rotini pasta
  • 1 cup dill pickles, chopped
  • 2 tbsp fresh dill weed (or 1 tbsp dried)
  • ½ cup mayonnaise (or Greek yogurt)
  • 1 tbsp yellow mustard
  • ½ cup red onion, finely chopped
  • ½ cup bell pepper, diced
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente; drain and cool.
  2. In a bowl, whisk together mayonnaise and mustard. Stir in dill pickles and dill weed.
  3. Chop the red onion and bell pepper into small pieces.
  4. Combine the cooled pasta with the dressing in a large bowl and toss well.
  5. Fold in the chopped vegetables along with salt and pepper; taste and adjust seasonings.
  6. Cover and chill for at least 30 minutes before serving.
