  • For streusel: 1/2 cup brown sugar, 1/2 cup flour, 1 tbsp cinnamon, 1/4 cup cold diced butter

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a mixing bowl, whisk together pumpkin puree, eggs, melted butter, brown sugar, and vanilla extract until smooth.
  3. Gradually add the flour, cinnamon, nutmeg, ginger, baking powder, baking soda, and salt to the wet ingredients. Mix until just combined.
  4. Prepare the streusel by combining flour, brown sugar, cinnamon, and cold butter in another bowl. Mix until crumbly.
  5. Pour half of the batter into the prepared pan. Sprinkle half of the streusel mix on top. Add remaining batter and finish with the rest of the streusel.
  6. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean. Cool slightly before slicing.
