  • 2 cups beef broth

  • 8 oz cremini mushrooms, halved
  • 4 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 tsp fresh thyme leaves
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping vegetables into even pieces.
  2. In a large Dutch oven, cook bacon over medium heat until crispy. Remove and set aside.
  3. In the same pot, sear the beef chunks until browned on all sides.
  4. Add onions and garlic; sauté until translucent.
  5. Stir in carrots and mushrooms; cook until slightly softened.
  6. Pour in red wine and beef broth, scraping the bottom to deglaze.
  7. Add flour, thyme, bay leaves, and reserved bacon; mix well.
  8. Cover and simmer on low heat for 2-3 hours until meat is tender.
