Instructions
- Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
- Toss sweet potato cubes with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet.
- Roast for 25 minutes, flip, then roast additional 15 minutes until edges are crispy.
- Meanwhile, mix honey, red pepper flakes, and minced garlic in a small bowl.
- Drizzle the hot honey mixture over roasted potatoes and toss to coat before serving.
